Nem ngua (fermented horse) is not very popular in Vietnam but it's a traditional dish in Luc Ngan in the northern province of Bac Giang.

It's made with a combination of horse, horse skin, soy beans, fig leaves, long-grain rice, and glutinous rice.

It's recommended to use fresh horse rump or loin that's cut, steamed, then filleted as lean, skin, and fat, which are all cut into strips.
